Thai Chicken Noodle Soup Recipe

Ingredients -

1 lb boneless, skinless chicken breasts, in ½ inch pieces
1 tablespoon vegetable oil
2 cloves minced garlic
¾ cup unsweetened coconut milk
6 cups chicken broth
¾ teaspoon turmeric
¼ teaspoon cayenne pepper
2 tablespoons chopped fresh cilantro
3 tablespoons smooth peanut butter
Juice from 1 lime (or 3 tablespoons lime juice)
½ cup red bell pepper, chopped
½ cup green bell pepper, chopped
1 tablespoon palm sugar or white sugar
2 cups rice noodles
Salt and black pepper, to taste

Preparation:

Heat the oil over a medium heat in a medium pot, and then add the garlic.

Stir fry it for a minute.

Add the turmeric, cayenne, and chicken and stir fry for 3 or 4 minutes.

Add the coconut milk, broth, peanut butter, and broth.

Bring the soup to a low boil, cover the pot, and let it simmer for 15 minutes.

Add the rice noodles, sugar, cilantro, and season with salt and pepper.

Simmer gently for 4 minutes or until the rice noodles are tender.
