Gently Spiced Mexican Chicken Noodle Soup with Pumpkin

If you cannot get small pumpkin, use yellow squash instead. Mexican Chicken Noodle Soup

Ingredients -

1 fryer chicken, 3, or 4 lbs
1 clove garlic, sliced
8 ribs celery, chopped
1 teaspoon cumin
2 onions, chopped
16 oz can tomatoes
2 small pumpkins, peeled, de-seeded and sliced
2 zucchini, sliced
1 package fettuccine
2 carrots, chopped
2 quarts water for cooking

Preparation:

Boil the chicken with half the celery, one of the onions and the garlic for an hour an a half.

Take the chicken out of the broth and add the carrots.

Cook for 15 minutes, and then add the other onion, the rest of the celery and the tomatoes and cumin.

Cook for half an hour.

Remove the skin and bones from the chicken and cut it into bite-sized pieces.

Add the pumpkin and zucchini to the soup, and cook for 10 minutes more, or until everything is tender.

Add the fettuccine and chicken and cook until the noodles are done.
