Ingredients -
3 teaspoon fresh coriander leaves or coriander packed in oil
1 quart chicken bouillon
4 freeze dried lime leaves
9 oz cooked chicken, in cubes
2 oz shitake mushrooms, in cubes
3 teaspoons tamarind paste
3 teaspoons red Thai curry paste
Lime wedges to serve
Preparation:
Heat the red curry paste for a minute in a large pan until fragrant.
Then add the mushrooms and chicken.
Stir well to coat in paste.
Pour in the bouillon, crumble in the lime leaves and add the tamarind.
Bring to the boil, and then simmer for 5 minutes.
Stir in the coriander, pour into bowls, and garnish with the lime wedges.
