Ingredients -
1 lb skinless, boneless chicken breasts
2 tablespoons minced ginger
2 tablespoons sesame oil
2 tablespoons dry sherry
3 tablespoons light soy sauce
8 cups chicken broth
3 tablespoons tahini
4 cups Chinese cabbage, chopped
˝ cup fresh cilantro, chopped
14 oz fresh Chinese noodles
1 tablespoon sugar
1 tablespoon rice vinegar
3 garlic cloves, minced
6 green onions, thinly sliced
1 ˝ tablespoons chili sauce
Preparation:
Cut the chicken crosswise into small strips, and then marinate it in the sherry, soy sauce and half the sesame oil for 2 hours in the refrigerator.
Combine the chili sauce, rice vinegar, garlic, ginger, sugar, and tahini in another bowl.
Heat the rest of the sesame oil in a soup pot and sauté the green onions and Chinese cabbage until the cabbage is tender.
Add the chicken broth and bring the mixture to a boil.
Add the marinated chicken, along with the marinade.
Turn the heat down to a low simmer and cook until the chicken is tender.
Cook the noodles until tender in a pot of boiling water, following the instructions on the package, then drain them and add them to the chicken soup.
Stir in half the cilantro and add salt and pepper to taste.
Serve the Chinese chicken soup with the remaining cilantro sprinkled over the top.
