Ingredients -
1 ½ lbs chicken breast with bone and skin
12 black peppercorns
10 cups water
8 cloves garlic
1 cup Asian sweet rice or sticky Japanese rice
1 teaspoon salt
2 inches fresh ginger, sliced
Fresh cilantro, for garnish
Soy sauce, to taste
Preparation:
Add the water to a cooking pot.
Clean the chicken breast and add it to the pot.
Add the ginger, garlic and peppercorns and boil for 45 minutes over a moderately high heat.
Put the rice in a bowl and pour cold water over it.
Skim the foam off the surface of the chicken cooking pot occasionally and keep a lid on it.
Remove the chicken breast and let it cool.
Strain the broth through a sieve and discard the garlic, ginger and peppercorns.
Shred the chicken and discard the cartilage, bones and skin.
Pour half the broth back into the pot.
Drain the cold water from the rice and add the rice to the pot.
Add half the chicken and a little salt.
Simmer for 20 minutes, stirring every few minutes.
Add more broth if necessary.
Add soy sauce to taste.
Ladle the soup into soup bowls and garnish with the cilantro.
