Ingredients -
1 chicken breast
1 tablespoon epazote
2 cloves garlic
1 tablespoon vegetable oil
1 chopped carrot
6 cups chicken broth
2 thinly sliced limes
1 cup canned garbanzo beans
½ chopped onion
2 tablespoons de-seeded, sliced chilies
2 tablespoons chopped fresh cilantro
1 de-seeded, diced Serrano chili
1 chopped fresh tomato
1 chopped avocado
1 tablespoon salt
2 tablespoons de-seeded, thinly sliced chipotle chili
Preparation:
Add the chickpeas, chicken, broth and garlic to a big pot and cook for 20 minutes over a moderate heat or until the chicken is cooked through.
Let the chicken cool, then shred it.
Heat the vegetable oil in a frying pan and saute the carrots and onions until they are tender.
Add them to the soup. Add the epazote and chilies and simmer the soup for 20 minutes.
Add the chicken and add salt to taste.
Serve the avocado, tomato, lime slices and cilantro on the side, so your guests can serve themselves.
