Asian Chicken Noodle Soup

Ingredients -

1 lb skinless, boneless chicken breasts
6 cups chicken broth
1 leek, finely sliced
1 carrot, thinly sliced
4 cloves garlic, minced
¼ cup chopped fresh cilantro
2 oz soba noodles
1 stalk celery, thinly sliced
2 teaspoons cooking oil
1 teaspoon sesame oil
3 tablespoons light soy sauce
1 ½ tablespoons peeled fresh gingerroot

Preparation:

Steam the chicken until it is cooked.

This will take 10 to 15 minutes.

Tear it into bite-size pieces.

Boil the soba noodles until they are al dente.

Drain them.

Heat the cooking oil in a big pot over a medium high heat, and then add the celery, leeks, and carrots.

Sauté the vegetables for 5 minutes.

Add the garlic, ginger, sesame oil, soy sauce, and broth.

Bring the Asian chicken noodle soup to a boil, turn the heat down to low and simmer it for about 20 minutes.

Stir in the chicken, noodles, and the fresh cilantro.

Serve the soup when all the ingredients in it are warmed through.
