Ingredients -
2 garlic cloves, smashed with a knife side
2 tablespoons vegetable oil (don't use olive oil)
4 oz chicken breast, in thin slices
2 oz glass noodles
¼ teaspoon sugar
1 tablespoon light soy sauce
½ teaspoon ground white pepper
1 tablespoon fish sauce
2 cups chicken bouillon or water
5 pieces of dried mushroom, soaked and chopped
1 scallion, green part only, slivered lengthways
Preparation:
Heat the oil in a medium pan until a light haze appears above it.
Fry the garlic in the oil for 30 seconds then add the bouillon or water.
Bring to the boil over a high heat. Add the chicken and heat for a minute.
Add the noodles and stir well.
Add the soy sauce, fish sauce, mushrooms, white pepper, and sugar.
Remove from the heat and pour into a tureen when everything is hot.
Use the scallion to garnish and season with fish sauce.
