Dutch ovens are ideal for long, slow recipes such as soups, stews, and casseroles. They can be made from cast iron or aluminum and sometimes have legs to support the oven over the heat source.

A Dutch oven is a very good pot for making soup recipes. It might be quite shallow but the wide base means that combining ingredients is easy. You can use a Dutch oven for many other recipes too so it is a good investment.

These ovens are quite heavy which is good for making soup recipes. You do not want a light, wobbly pan full of hot liquid balanced precariously on your stove! Dutch ovens are solid and good quality and when making soup it is best to use the best equipment for the job in order to get the best results.

There are various ways to thicken soup and different techniques suit different types of soup. You might be planning to thicken the soup towards the end of cooking or your soup might be mysteriously thin when it should be thicker. Adding breadcrumbs is one soup thickening method but there are others too.

Thickening Soup with Pureed Vegetables

Adding pureed vegetables is a popular soup-thickening technique and you simply need to take some of the cooked vegetables out of the soup, puree them in a food processor or blender, and return the puree to the pan. You can also grate raw potatoes or yams into the soup and cook them. Stirring in mashed potatoes thickens up the soup too.

Using Flour and Dairy Products to Thicken Soup

You can make a flour paste by combining flour with twice as much water, bouillon, or milk. Add this paste to the soup and stir it slowly, simmering for five or ten minutes. You should use a teaspoon and a half of flour per cup of soup. Alternatively, you can use a flour and butter roux as a thickener. You can add richness, flavor, and bulk to your soup by adding cream or evaporated milk.
