Mom's Home-style Chicken Noodle Soup

Mom's Own Easy Homemade Chicken Soup

Ingredients -

12 oz boneless, skinless chicken breast
1 tablespoon olive oil
7 cups good quality chicken bouillon or chicken broth
1 cup fresh or frozen peas
1 cup diced onion
½ cup flat leaf parsley, roughly chopped
4 sliced carrots
1 cup egg noodles or pasta shapes
Salt and black pepper, to taste

Preparation:

Heat the oil over a medium high heat in a soup pot, and then add the onion.

Stir until it is coated with oil and add some salt and pepper.

Cover the pot, turn the heat down to medium low, and cook the onion until it is translucent, stirring occasionally.

This will take about 15 minutes.

Add a tablespoon of the chicken bouillon if you think the onions might burn.

When the onions are soft, add the bouillon, the carrots and the chicken breasts (leave them whole). Cook uncovered for about 10 minutes or until the chicken breast is done.

Take the chicken breast out, let it cool a bit, and then shred it.

Add the noodles or pasta to the pot and cook for 10 minutes, then add the peas and cook for 5 minutes more.

Put the shredded chicken back in the pot.

Add the parsley, then add more salt and pepper if necessary. Cook for 1 more minute, then serve.
