Herby Chicken Consomme Soup

This delightful clear chicken soup can be drunk from a mug or served in a soup bowl. Some people like thick, creamy chicken noodle soup recipes and others like thin, clear soups. This one is a great appetizer because it is delicious without being too filling. The garlic and fresh herbs give this chicken consommé recipe a beautiful and delicate flavor and this soup makes a nice drink when you do not want tea or coffee. It is also extremely delicious when you feel under the weather and need something nutritious to drink that is easy to digest.

You can make instant chicken consommé soup with granules or a bouillon cube but homemade chicken consommé is far better in quality and flavor, not to mention healthier because the ingredients are all pure and nutritious. You will also get less sodium. Use the stems and the leaves of the fresh herbs, for maximum flavor. You can substitute ground veal or beef for the ground chicken if you like, for a different taste.

Serve this consommé as an appetizer or for a light lunch or dinner. Serve it with a sandwich or salad to round out the meal. Chicken consommé is like having liquid chicken. All the flavors are condensed into that delightful, clear liquid. It is especially attractive if you garnish it with dill or thyme leaves. They add color and flavor to the finished soup. Consommé can be served in a teacup, a small bowl, or a large, flat bowl.

Chicken Soup Consommé with Fresh Herbs

Ingredients -

4 oz ground chicken
½ cup finely chopped celery
½ cup peeled, finely chopped carrot
3 cloves garlic, smashed
2 tablespoons fresh dill, to garnish
8 cups chicken bouillon, defatted
8 egg whites, lightly beaten
1 cup finely chopped yellow onion
¼ cup finely sliced leek
¼ cup chopped fresh tarragon
¼ cup chopped fresh thyme
¼ cup chopped fresh parsley
Black pepper, to taste

Preparation:

Combine the ground chicken with the leek, celery, onion, carrot, thyme, parsley, tarragon, black pepper, and garlic in a food processor and puree the mixture on a high speed.

Combine the pureed meat mixture with the egg whites, stirring well to blend.

Put the bouillon in a big pan and add the pureed meat and egg white mixture.

Bring to a boil, stirring constantly to stop the pureed meat sticking to the bottom.

When the bouillon boils, do not stir it again.

Poke a hole through the pureed meat.

Let the soup simmer for 15 minutes, then remove it from the heat.

Strain the consommé through a cheesecloth or sieve and serve hot with the dill sprinkled on top.
