Easy Chicken Noodle Soup

This delicious easy chicken noodle soup recipe combines the flavors of chicken, vegetables, noodles, and herbs to result in a delicious, comforting soup that everybody will love. This chicken noodle soup is particularly easy to make and you just need to add the ingredients in the right order and let it simmer for half an hour. The combination of parsley, sage, thyme, rosemary, and pepper really livens the soup up and these herbs and spices are perfect with the naturally soft flavor of chicken.

Sometimes nothing else hits the spot like easy chicken noodle soup and whether you feel down, under the weather, ill or just in need of something comforting, this is one of those recipes which you will want to make time and time again. Chicken soup from a grocery store is never as satisfying as homemade chicken noodle soup. There is just something intrinsically special about it.

It is very hard to put your finger on exactly why chicken soup is so soothing. Comforting chicken soup might be creamy chicken soup, crockpot chicken soup, Asian chicken soup or another variety, depending on what you personally find comforting. Chicken soup is a feel-good drink or snack and the following recipe is a definite winner.

Comforting Chicken Soup with Herbs

Ingredients -

2 lbs skinless, boneless chicken, in 1 inch cubes
1 tablespoon thyme
2 tablespoons rosemary
1 tablespoon parsley
2 ribs celery, sliced
¼ tablespoon sage
1 onion, diced
16 oz chicken broth
16 oz frozen sliced or crinkle-cut carrots
1 package egg noodles
3 tablespoons olive oil
Water, as required
Salt and black pepper, to taste

Preparation:

Sauté the chicken with the rosemary in the oil in a skillet over a medium high heat.

Put the browned rosemary chicken in to a soup pot with the celery, carrot, onion, egg noodles and all the herbs and spices.

Add as much water as you need to cover everything plus be a couple of inches above the other ingredients, and then bring the chicken noodle soup to a boil.

Let it boil for 5 minutes, then simmer it for 30 or 40 minutes, stirring it every 10 minutes or so.
