This is a very simple chicken noodle soup recipe but sometimes the simplest recipes come out the best and are the most satisfying. This chicken soup recipe contains chicken, garlic, noodles and some herbs and the result is a tasty, hearty soup, which makes a great snack or appetizer.

You can either use light cream or half and half for a creamy finish. If you do not want to use cream, add an extra cup of water instead of the cream. You can use medium or thick egg noodles. Try whole wheat spaghetti if you want some extra fiber. Also, feel free to throw in a handful of frozen vegetables ten minutes before the end of the cooking. This is not a vegetable-rich chicken soup but if your idea of the best chicken noodle soup contains vegetables, feel free to add them.

This is a very easy recipe to make and it cooks quickly. You probably already have most of the ingredients on hand. This chicken noodle soup recipe calls for medium egg noodles but some chicken soups are good with wide egg noodles or even linguine. Chicken and Egg Noodles in Soup with Parsley and Garlic

Ingredients -

1 ½ lbs boneless, skinless chicken breast
1 onion, minced
2 tablespoons chicken soup base
11 cups water
1 cup light cream
6 cups wide egg noodles
¼ teaspoon black pepper
2 tablespoons parsley flakes
3 cloves garlic, minced

Preparation:

Cut the chicken into 1 inch pieces, and then put it in a big soup pot or Dutch oven with the garlic, parsley, soup base, onion, and black pepper.

Brown the chicken, adding a little water if you are not using a non-stick pan.

Add the 11 cups of water and bring the soup to a boil.

Add the egg noodles and cook for about 5 minutes, until the noodles are tender.

Turn the heat down, cover the pot, and simmer the chicken soup for 15 minutes.

Stir in the cream and simmer the soup for 5 minutes more.
