West African Peanut Chicken Stew

Ingredients -

1 tablespoon olive oil
1 roasting chicken, about 3 lbs, boned and cut into bite size pieces
1 onion, chopped
1 large potato, diced
2 cloves garlic, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander seed
1 teaspoon ground black pepper
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 cup water
15 oz can garbanzo beans, drained and rinsed
¾ cup unsalted natural-style peanut butter

Preparation:

Heat the oil in a skillet with a tight-fitting lid over a medium high heat.

Brown the chicken then remove t from the pan.

Turn the heat down to medium low and add the garlic, potato, and onion.

Sauté for a few minutes. Season with coriander, black pepper, cumin, salt, and red pepper, without letting the garlic brown.

Stir in the chicken, any juices, and the water.

Put the lid on the pan and simmer for 10 to 15 minutes, stirring now and then.

Take the lid off and stir in the peanut butter and garbanzo beans.

Put the lid back on and simmer for another 10 minutes or until the potatoes are tender and the chicken is cooked through. Adjust the seasoning.
