Chicken Stew with Champagne and Noodles

Ingredients -

2 tablespoons flour
3 cups champagne
Chopped parsley
8 oz wide spinach noodles, cooked
½ teaspoon dried thyme
1 tablespoon olive oil
1 chicken, 2 ½ lbs, skinned and chopped up
3 cups low sodium chicken broth
3 celery ribs, chopped
3 carrots, chopped
pepper

Preparation:

Mix the pepper and flour in a big Ziploc bag or bowl.

Add the chicken pieces and coat well.

Heat the oil in a Dutch oven and cook the chicken until browned all over.

Drain it on paper towels and return it to the pot.

Add the champagne, broth, vegetables, and seasonings and bring to the boil.

Turn the heat down and skim the fat off the top.

Serve the stew over hot noodles, sprinkled with parsley.
