This excellent chicken soup recipe is extra special because it is served in a hollowed out sourdough bread bowl. This chicken soup recipe contains corn, beans, bell pepper, onion and more for color, and it is spiced up and flavored with cilantro, garlic, lime juice, coriander and cumin. This soup has a strong Mexican influence, with regard to the flavor, and the bread bowl is edible once the soup has been eaten. Serve the bread bowls in soup bowls, in case they spring a leak!
You can serve pretty much any chicken noodle soup or other soup recipe in a bread bowl, just to make it more unusual. Perhaps you have enjoyed pumpkin soup served in a hollowed out pumpkin or some kind of delicious hot soup in a bread bowl before. If so, you will know that the dish looks appealing and it looks like you have put a lot of effort into making something spectacular. In fact, making bread bowls is really easy but your guests don't need to know that!
Ingredients -
4 round sourdough loaves, 8 oz each
2 lbs chicken breasts
2 garlic cloves
3 tablespoons all purpose flour
1 chopped onion
1 quart chicken broth
½ cup fresh cilantro
Juice of 1 lime
15 oz can black beans, drained
1 tablespoon ground cumin
1 ½ tablespoons ground coriander
4 cups frozen corn
Small can black beans, drained
1 red bell pepper, chopped
1 chipotle in adobo sauce, chopped
2 tablespoons vegetable oil
Salt and black pepper, to taste
Preparation:
Preheat the oven to 350 degrees F.
Cut the chicken into bite-sized pieces.
Cut the top off the bread and scoop out the center.
Cut the garlic cloves in half and use them to rub inside of the bread bowls.
Bake the bread bowls on oven racks until crispy.
This should take about 20 minutes.
Add the vegetable oil to a soup pot, the saute the chicken, cumin, coriander, chipotle, salt and pepper over a moderate to high heat for 4 minutes or until the chicken is lightly browned.
Add the bell pepper, black beans, corn and onion and cook for a few minutes.
Sprinkle the flour over the soup and cook, stirring, for 2 minutes.
Turn the heat up and pour in the chicken broth. Simmer the chicken soup for 15 minutes, then add the cilantro and lime juice.
Check and adjust the seasoning.
Serve the soup in the hollowed out bread bowls.
