Creamy Chicken and Mushroom Soup

Ingredients -

2 Tablespoons butter
1 Tablespoon olive oil
1 pound boneless chicken breasts, diced
½ cup carrot, diced
1 large rib celery, diced
1 pound mushrooms, sliced
1 clove garlic, minced
2 Tablespoons flour
4 cups chicken broth
½ teaspoon dried thyme
½ teaspoon salt, or to taste
Ground black pepper, to taste
¾ cup heavy cream

Preparation:

In a large sauce pan, heat up the olive oil and butter over medium-low heat.

Add the chicken, celery, and carrot.

Let them cook, stirring frequently, until the chicken is almost cooked through.

Add the mushrooms.

Keep stirring until mushrooms are tender.

Add the flour and mix until well blended.
