Ingredients -
8 oz cooked chicken, cubed
⅛ teaspoon black pepper
⅛ teaspoon ground nutmeg
1 ⅓ cups cottage cheese
½ cup half-and-half
1 teaspoon paprika
3 tablespoons fresh chopped chives
3 ½ cups water
1 scallion, chopped thinly lengthwise
3 teaspoons instant chicken bouillon
Preparation:
Combine the milk and cottage cheese in a blender and blend until the mixture is smooth, then transfer it to a pan.
Add the water, chives, broth mix, pepper, nutmeg, paprika, and heat, stirring occasionally, over a low medium heat until it boils. Add the chicken, heat it through, and serve the chicken soup, garnishing each bowl with scallions.
