Ingredients -
1 chicken (about 3 ½ lbs), quartered
3 stalks celery, sliced
1 onion, chopped
1 ½ cups dried egg noodles
2 cans mixed vegetables, 15 oz each
2 boxes chicken broth, 32 oz each
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
1 bay leaf
Preparation:
Put the chicken quarters, chicken broth, celery, onion, salt and pepper in a big soup pot.
Bring the mixture to a boil, then turn the heat down and simmer it, covered, for 2 hours or until the chicken is cooked through.
Take the chicken out of the soup and let it cool.
Remove the meat from the bones and put the chicken meat back in the soup.
Discard the bay leaf. Bring the soup to the boil and add the mixed vegetables, parsley, and noodles.
If you want the soup thinner, do not drain the liquid from the canned vegetables before adding them.
Simmer the classic chicken noodle soup until the noodles are tender, and then serve.
