Ingredients -
½ cup thinly sliced leek
1 cup chopped celery
½ cup sliced carrot
6 cups chicken broth
½ cup chopped turnip
¼ teaspoon black pepper
1 teaspoon balsamic vinegar
1 tablespoon minced fresh parsley
1 ½ teaspoons fresh thyme or ½ teaspoon dried thyme
1 teaspoon fresh rosemary or ¼ teaspoon dried rosemary
1 cup cooked chicken breast, diced
2 oz wide noodles
Preparation:
Combine the vegetables with 1/3 cup of the chicken broth in a big pan; cover and cook over a medium heat until the vegetables are tender, stirring it occasionally.
This will take about 14 minutes.
Stir in the rest of the broth, the herbs, pepper, and vinegar.
Bring the chicken soup to the boil and add the noodles, cooking it until the noodles are soft.
Stir in the chicken, turn the heat down to medium, and simmer until the chicken is heated through.
