Easy Chicken and Noodle Soup with Pea Pods

This chicken and noodle soup features the flavor of rice noodles, which are lighter than egg noodles and have a slightly different flavor. Rice noodles are very popular in Thai cooking. Onion is used for flavor and texture and of course, chicken is a main ingredient in this chicken soup recipe. Combine liquid with chicken and noodle and soup is the delicious outcome. Comforting Chicken and Noodle and Soup Recipe

Ingredients -

4 skinless, boneless chicken breast halves, chopped
2 chicken broth cubes
2 ½ pints boiling water
2 oz rice noodles
2 cloves garlic, crushed
1 tablespoon chopped fresh parsley
¼ teaspoon black pepper
1 carrot, sliced
3 oz fresh or frozen pea pods
1 onion, chopped

Preparation:

Dissolve the broth cubes in the water and pour the mixture into a big soup pot.

Add the chicken, onion, garlic, parsley and black pepper and stir.

Bring the soup to a boil, and then turn the heat down to a simmer.

Cover the pot and cook the soup for 30 minutes or until the chicken is cooked.

Add the carrot and peas and simmer for 10 minutes more.

Add the noodles, turn the heat off, and leave the soup for 5 minutes, then serve.
