Amish Chicken Soup with Cheese

This is another chicken noodle soup, which takes mere minutes to make yet is very comforting and tasty. This chicken noodle soup is simple to prepare because you just simmer the ingredients together for a few minutes and that is all there is to it.

You can use a cup and a half of frozen vegetables if you prefer. The recipe calls for carrot and broccoli, but you can use green beans, peas or any other vegetables to want to use up. Chop big vegetables up small, so they cook quicker, or sauté them before adding them to the soup. If you like really thick soups, you might want to use some half-and-half instead of the milk, but the cheddar cheese soup does tend to thicken this chicken noodle soup recipe up quite a lot, so add a little cream at the very end, if you still want to.

Authentic Amish Chicken Soup

Ingredients -

10 ¾ oz can cheddar cheese soup
1 ½ cups water
1 tablespoon butter
1 carrot, finely chopped
Handful broccoli, chopped
8 oz chicken, cooked and chopped
6 oz wide egg noodles
1 cup milk

Preparation:

Put the milk and butter in a big pot and bring the mixture to a boil over a high heat.

Stir in the egg noodles, and then add the chopped vegetables.

Bring the mixture back to the boil, cover the pot, and simmer it for 8 minutes.

Stir the mixture every couple of minutes.

When the noodles are cooked and the vegetables are tender, turn the heat down to low.

Add the chicken and the cheddar cheese soup and heat the mixture through, stirring now and then so nothing sticks to the bottom of the pot.

When the soup is hot, serve it immediately.
